CHEESY CHICKEN PARCEL
When you open this parcel, oh my word: cheesy chicken-y perfection. For lunch ready-made for tomorrow, double the quantities and pop an extra parcel in the oven.
SERVES 1
Ready in 50 mins
1 skinless, boneless chicken breast (150g)
¼ red onion
½ red pepper, deseeded
½ courgette
1 garlic clove
40g Cheddar cheese
1 drizzle olive oil
salt and pepper
as much piri piri sauce as you can handle
1 tsp ground cumin
½ tsp dried chilli flakes
60g cooked quinoa
Heat the oven to 200°C (or 180°C for a fan oven).
Loosely wrap your chicken breast in a big sheet of oiled foil, leaving enough space for the veg. Put it in the oven for a 5-minute head start while you chop all your vegetables and garlic and grate your cheese.
Take the chicken parcel out of the oven and open up the foil.Arrange all the veg and garlic in the foil around the chicken, sprinkle the cheese on top, drizzle with olive oil and season with salt and pepper and a dash of piri piri sauce. Close the parcel and bake for 45 minutes. There’s that workout window you’re looking for.
Just before you’re about to eat, stir the cumin, chilli flakes and salt and pepper through your cooked quinoa and give it 1 minute in a pan over a medium heat to warm through.
Serve your chicken and cheesy veggies on top of the quinoa, drizzled with more piri piri sauce. Yum.
